Motoki Takahashi, the culinary force behind Authentic, has honed his craft in some of the world’s most prestigious kitchens. His impressive career includes four and a half years as Chef Pâtissier at the Michelin two-starred NARISAWA, a name synonymous with innovative Japanese cuisine. He then ventured to New York, where he played a pivotal role in launching a Brooklyn restaurant, contributing to its swift achievement of a Michelin star. After his return to Japan in May 2025, Chef Takahashi meticulously prepared for his independent venture, driven by a profound vision.
“Despite Japanese desserts being world-class, they haven’t yet become a travel purpose like sushi or washoku,” shares Chef Takahashi. “My vision is to elevate desserts to a status where people travel to Japan specifically for its seasonal delights.”
This ambition reflects a deep understanding of Japan’s culinary landscape, where traditional dishes like sushi and washoku (traditional Japanese cuisine) are global magnets. Chef Takahashi aims to place modern dessert art on that same revered pedestal, beginning with the pursuit of a Michelin star for Authentic.

Authentic is built on the concept of “establishing a dessert-tasting culture in Japan and worldwide.” Guests will embark on a sensory adventure through a meticulously crafted six-course dessert menu, each dish reflecting the delicate nuances of Japan’s changing seasons.
